Icecream Cake and Layers

Guys… it’s warming up outside.  Time to get out the flip flops (oh wait I wore mine all winter to), hang out at the pool (does the tiny kiddo pool my niece and nephew have count) and enjoy some fun summer recipes.

Like this ice cream cake I made for Memorial Day.
It’s a pampered chef recipe and it’s delightful.  And I think you would love to make it to.  It’s easy.  Fun.. and each layer is like a party in your mouth.

This was the finished product.  I love that there are all kinds of layers underneath the top.  Just want you to remind you guys that’s the way life is to.
There are layers.  God is always up to things.  He lays a foundation in our hearts of Himself and then continues to build on it.  When you cut into our hearts there are layers that can be found.  Our God lavishly pours out His love on us.  Let these layers of love build in your hearts.  Taste and see God is GOOD.

ok.. on to recipe.

Icecream Cake 

10 Oreo cookies, coarsley chopped (about 1 cup)
1/2 cup milk
1 -4 ounce chocolate flavor instant pudding and pie filling mix
1 -12 ounce frozen whipped topping, thawed and divided
12 ounces ice cream sandwiches, frozen, unwrapped and divided
2 tablespoons semisweet chocolate morsels, grated or 2 tablespoons multi-colored candy sprinkles

Directions:  

Combine milk and pudding mix, whisk until smooth and beginning to thicken. Fold in half of the whipped topping; set aside.

Quickly, arranges six of the ice cream sandwiches side by side on a large platter.

Spread the filling evenly over the sandwiches, then place remaining sandwiches on top – creating a rectangular “torte” shape. Smooth the sides.

Spread remaining whipped topping over the top and the sides of the torte.

Grate the chocolate morsels over everything.

Freeze until firm, but not hard (so that it can be cut). If freezing it over night, remove about 30-45 minutes before serving.

Chef Jenn’s own personal flair:  I doubled the recipe mix part and used the pampered chef bar pan and just did one layer of 12 ice cream sandwiches, then placed the cookie/pudding delightfulness as a layer on top, then cool whip covering that, then froze it.. and added red sprinkles instead of chocolate morsels for memorial day!

  1. Pretty much anything involving strawberries is a favorite summer treat for me. I just discovered this strawberry cream cheese cobbler that was so good I had to go back to the berry farm to get more berries so I could make it again … 🙂

    I cannot wait to make this dessert and I might have to call you for a Pampered Chef item –
    but finding ways of seeing God in even this dessert is how I want to live. Thanks for setting the example, so deliciously….
