Tortilla Tuesday !

I got crazy tonight and made homemade tortillas for dinner. Really it was a last ditch effort in the midst of waiting on school money to come in and low finances to find something in my freezer that made sense and turn it into a meal. So I found me some frozen chicken, and frozen bellpeppers I had cut up and decided to make tortillas and have me a good ol‘ fashioned yummy wrap. It was so much fun. I wish you could see me in my kitchen. A messy cook IS a happy cook right. I am a HAAAAPPPY cook. Flour=everywhere. Smoke=everywhere. Don’t know why but it seems everytime I cook there is smoke in the kitchen.. hmm… I dont mean to let that happen. I also did not mean to catch the outhouse on fire that one time in nepal.. or the other day accidently flip my clients chart into the flame of the candle I had just lit to create a soothing atmosphere in my office. All the sudden i realized.. hmm.. that is not island coconut smell. that is burning. And I looked and my clients file was on FIRE. Ha.. I had to put it out quickly by dumping my coffee on it.. hope those files are never needed for something important.
anyways– back to my kitchen.

As I was having a blast trying to make those things round I was remembering when I first learned to make homemade tortillas.. and made them all the time. I was a missionary on the other side of the world in a very difficult land called nepal. That seems like years ago even though it was only almost 2 years ago. While I lived there we learned to make everything from scratch. I made many a tortilla for gatherings– especially when us foreigners got together.. It was like a little piece of home. As I rolled tonight i remembered.. those joys of living in nepal, the struggles, the feeling so far from home and so foreign to the world there.. overwhelmed with faith in what God could do and surrounded by the darkness of other dead gods. Whew.. what a place. So as I rolled I prayed :

for those still there

for those serving God in foreign places all over

for God to use me here

and God to take me EVERYWHERE for the glory of His name

all around the world

as I rolled all around the tortilla!

Tortilla recipe:

2 cups flour

1/4 cup oil

3/4 cup water

pinch of salt

mix 2 cups flour with 1/4 cup oil and 3/4 cup of water until forms ball.. Divide into separate balls according to the size you like. Roll out into circle and place in hot pan (no oil in pan) when one side begins to bubble, flip. When finished eat while hot. that’s the BEST
